"Crawfish Jambalaya"
Qty Size Ingredients Notation
1 lb.  Crawfish Tail Meat & Fat  
1 cup  Rice  Uncooked
3 Tbsp.  Flour  
3 Tbsp.  Canola or Vegetable Oil  
2 1/2 Cups  Water  Hot From Tap
1 10 oz.  Can Rotel  Original
1 medium  Onion  Diced
1 medium  Green Bell Pepper  Diced
1 bunch  Green Onions  Thinly Sliced
1/2 cup  Parsley  Finely Chopped
1 Tbsp.  Cajun Seasoning  To Taste
"How to Prepare Crawfish Jambalaya"
  • Mix flour and oil together in a heavy pot and make a medium-dark roux.

  • Add the diced onions to the roux and cook until the onions are translucent.

  • Add the water to the roux and bring to a boil.

  • Reduce heat to medium-low and simmer for 30 minutes, stirring occasionally.

  • Add green onions, bell pepper, parsley and Cajun seasoning. Cook for an additional 30 minutes.

    Note: Mixture should have the approximate consistency of soup before the rice is added. If the mixture appears too thick, thin with hot water to the desired consistency.

  • Add crawfish and rice. Cook for 25-30 minutes, or until the rice is cooked.

    Note: 15 minutes after adding the crawfish and rice, check for adequate seasoning. Add Cajun seasoning to taste, if needed. Stir thoroughly after adding seasoning.

  • When the rice is cooked, remove Crawfish Jambalaya from heat and serve.
